Well, Bless Your Heart, Vol. II, by Patricia B. Mitchell, was created during 1989-1998 as a handbook for those interested in enhancing their overall health through practical dietary considerations. The book features easy and healthful main course dishes like “Romanesque Simmered Chicken,” “Far-Out Far East Chicken,” and “Cajun Eggplant over Rice.”
